Orange and Polenta Cake

The recipe for the gluten-free, fruit cake is here: Orange and polenta cake.

As I explained on Thursday, I didn’t add the syrup because the cake had cooled by the time I finished scrubbing the patio.  I think adding cardamon pods or coriander seeds to the first stage (cooking the sultanas in juice) might be a good adaptation.  To make it more Mediterranean.
